The single-grain Japanese whisky is distilled from long-grain Indica rice that ferments with the help of black koji ― a type of mold that is used in sake and soy sauce production. The whisky matures for 12 years in sherry casks exclusively, with the subtropical climate providing perfect conditions for maturation. Complex and balanced, it’s a fruity and sweet expression that’s produced in small batches, distilled, matured, and bottled at 80 proof right there at the distillery.
