About Zafra 30 Year Old Master Series Rum
Located in the province of Herrera, Panama, famous for its sugar cane fields and mineral-rich volcanic soil, the origins of Las Cabras Distillery date back to 1919 when it was a sugar mill. Rediscovered in the mid-1990’s by Francisco Jose Fernando Perez or “Don Pancho” and Carlos Esquivel, the CEO of Proveedora Internacional de LIcores, S.A. (PILSA), who uncovered the neglected copper column stills with a small medallion inscribed with the words ‘Cincinnati 1922’. Today, this is a modern rum production plant with five columns, distilling rum from molasses that are fermented with a strain of pineapple yeast. Using similar methods of barrel aging and blending to Cuban style of rum, Las Cabras Distillery produces its own brands, among them Caña Brava Rum and Zafra.
First launched in 2009 by Lazaro Carbajal and Gardner Blandon, Zafra is Spanish for the act of harvesting sugar cane. Zafra Master Series 30 is a premium, limited edition cane-based rum. It was aged for 30 years in hand-selected bourbon casks and the maturation was closely monitored until the spirit reached its ideal condition. This is an extremely rare, small batch expression with only 6,720 bottles ever to have been produced. Bottled at 80 proof, this beautiful rum features a rich palate with notes of dried fruit, honey, nutmeg and vanilla.

About Rum
Rum history allegedly started in the Carribiens in the 17th century when they started to ferment and distill molasses, a byproduct of sugar production. Most of the Rum is aged in oak or ex-wine casks, giving its color and flavor.
We distinguish between 4 different Rum categories, where white or unaged rum is mainly used in cocktails, while dark, spiced, and añejo (aged) rum are mostly enjoyed neat.
